We are experimenting with picking a little earlier, cellar temp fermenting (no cold stabilization), low intervention, and extended lees aging to give wine character and complexity. you’ll have all of the apricot and stone fruit you look for in a refreshing Riesling, but you’ll also discover honey, beeswax and earthy mineral primarily brought on by the extended lees aging.
* In some bottles you’ll find tartrate crystals. This is the phenomenon that happens when cold stabilization doesn’t occur during fermentation and the bottled wine chills below 45˚F. The tartaric acid connects with potassium and voila – tartrate crystals! We call these the lucky bottles.
